VITICULTURE:
Our work in the vineyards is guided by two principles: to respect all living things and to intervene a little as possible.
- 100% reserve wine from our solera
- Selective harvesting of grapes at optimum maturity
- Malolactic fermentation always carried out
- Ageing on lees
- Less than 1,000 bottles produced in selected years
- Available in 75cl bottles
TASTING NOTES:
Exclusively from our Largillier vineyard, from a single varietal : Pinot Noir but in the case of this champagne, from several different harvests.
We use grapes from all 4 plots in our vineyard: MINERAL, FRUIT, FLOWER and SUBSTANCE.
A wine that is all about finesse with a delightful fresheness that highlights the subtle aromas of acacia honey, ripe pineapple and a touch of menthol on the finish.
Bold on the attack (thanks to the clay in the KM2 soil) ; refreshing with marked minerality and a long finish (thanks to the limestone content of the KM2 soil).
SERVING SUGGESTIONS:
Exquisite with foie gras. Wonderful with warm apple pie coated in melted butter. Try it with Rocquefort cheese served with lemon-infused pears, caramel and Balsamic vinegar.
Best served at 11° C (52° F).
