ESTATE
Domaine Eleni & Edouard Vocoret's first vintage was debuted in 2013. Eleni and Edouard met while working harvest in New Zealand in 2010; they were married and found their way back to Chablis to take over 4.9 ha of holdings from Edouard's family domaine - Domaine Vocoret & Fils, a large and established domaine in Chablis, with over 50 ha planted.
Edouard and Eleni, who worked as the assistant winemaker of the legendary Vincent Dauvissat and Oudin are solely focused on small production, quality and terroir. After a few years making wine in a small artisanal garage they finally finished building their new cellar last year. Located in an old farm they designed their winery to work as much as possible by gravity.
VINEYARDS
In the early years Eleni and Edouard had to prioritize their investment on the vinery building therefore they decided to outsource all the treatment works for the first years. After a few years of activity with their reputation growing, they finally managed to afford a tractor, and since 2019 Edouard has been doing all treatment himself. He is aiming to use as much organic treatment as possible but not claiming organic farming.
WINEMAKING
With their inspiration of traditional Chablis, the vinification process follows accordingly with alcoholic fermentation completed in stainless steel with indigenous yeasts, élevage in old barrels for 9 months - village, a year - premier crus and transferred back in tank for 1-2 months for assemblage. The wines are then bottled unfined and unfiltered with minimal sulphur addition.
